查看规格书和demo电路，发现都是按 mid-span PSE电路设计，能否将48V和PSE_N接到网络变压器中间抽头呢？ 按Endpoint PSE进行设计呢？

好像是不行的，都是按照datasheet上这种设计。
从变压器原来看中抽头可以，但是按时这样按照POE功率侦测可能有问题。
或者在实际中你可以试试看，也可以在美国E2E上再问一下： https://e2e.ti.com/
