EL_GSR2 and EL_GSR1 If it forms resistance when connected to the human skin, and no current flows through it, how can the resistance be detected? Is there something wrong with this circuit? It needs to be explained.

The simulation software shows that no matter how I adjust the variable resistor, the output voltage remains unchanged.

Where is the above schematic from? Where are the EL_GSR1 and EL_GSR2 ports connected to? Changing the variable resistor in your schematic should change the output since you're changing the feedback factor (and thus the gain). Please see this analog circuit cookbook: Non-Inverting Amplifier Circuit

I don't have much experience looking at Falstad simulations. Please use TI approved simulators like TINA-TI or PSpice-for-TI for simulations.
